
Now the title of this post may sound a bit odd but you have to trust me with this combination because it’s ABSOLUTELY SCRUMPTIOUS!!! The soft, spice enriched falafel, creamy houmous and the crunchy sweet green apple are a perfect trio on there own. However, I don’t stop there, I also serve the platter with a really zingy lemon, mustard and cyder vinegar dressing, yes these flavours can seem very bold but a dribble of each makes the most sublime sauce to drizzle over. This dressing adds an extra note to the houmous, brings out the sharpness in the granny smith apples and the falafel soak up the dressing stopping them being too dry and cloying. I sometimes find if you have made your falafel a day or two in advance they can be a little dry so this is the perfect meal to use leftover falafel.
This is my take on a middle-eastern mezze platter, commemorating their traditional cuisine falafel and houmous but giving them with an english twist by serving them with slices of granny smith apples and an english mustard dressing. You can probably tell from the title of this post that I’m craving warmth and sunshine. England has seen a few hot and sunny days recently but with my exams just 3 WEEKS AWAY!!! I have been cooped up indoors revising or more than too often pining out the window dying to be in the sunshine.
This dish is perfect to prepare ahead to take to work/school or when you have friends round for lunch because, it’s fuss free as it’s so quick and easy to prepare. I usually make this when I have already made some homemade falafel and houmous but this isn’t essential, you can get some really great organic houmous in practically all supermarkets and most will sell falafel too.
So, there’s no excuse not to make this dish and believe me once you’ve tried it you’ll be craving this dish over and over again!
(This recipe serves 1 but can easily be doubled etc to serve more people)
INGREDIENTS:
- 10ml olive oil
- 1/2 tsp cyder vinegar
- 1/4 tsp english mustard
- 1/2 garlic clove (finely chopped)
- pinch salt & pepper
- lemon juice
- x3 falafel
- tbsp or so of houmous
- small granny smith apple (cut into 6)
METHOD:
1. In a small glass, bowl or jar mix together the oil, vinegar, mustard, garlic, seasoning and enough lemon juice to suit your taste. Arrange the falafel, houmous and apple slices on a plate before drizzling everything in the dressing.
2. That’s it! Eat and enjoy.
